Recipe | Birthday cake

Hi Rangers,
 
So I might be a bit of a cheater, because this blogpost will mostly be about the delicious creme cheese/buttercreme frosting that I made, and not so much about the entire birthday cake extravaganza. There will be a list for both, but only a pictures tutorial for the frosting. 
 
Okay, It was nice to get that off my chest and move on.. here we go.

You really only need 4 ingredients to make this, and preferably at room temperature:
  • 2 cups or 16oz of Creme Cheese; I used a lactose free Philadelphia. Please don't use the light kind, your frosting will be runny.
  • 2 teaspoons of Vanilla extract or vanilla sugar.
  • 2 cups of Powdered sugar.
  • 8 oz of Butter, the real kind. 
 
Okay, this is how you make this deliciousness.
  1. Mix creme cheese to make it fluffy and easier to handle.
  2. Add the butter in smaller chunks.
  3. Mix it up, until it is well combined with no big lumps.
  4. Add the powdered sugar. You want to mix slowly, otherwise you can end up wth a giant sugar cloud in your kitchen. When it is all mixed together, you can kick it up a notch and mix until fluffy.
  5. Add vanilla extract/sugar and mix well, until combined.
  6. In this version, I also added in some smashed up Daim Chocolate, which you should add in now and mix, before spreading the frosting on to your cake layers.

In this blogpost, you can see two different cakes. The layers are made in the same way, just added different colours because of different occasions.

To make the cake layers, you will need a few things:
  • 3 eggs
  • 150 g of sugar
  • 150 g of flour
  • 1 1/2 teaspoon of baking powder
  • You will also need a round cake pan 
The oven should be on at 240 Degrees C. 
 
These layers are really fast to bake, they only need about 5 minutes in the oven. You can also freeze them, which is really awesome, because who doesn't like layer cake, even when busy on a regular day or a pop-in visit.
 
Okay, this is how you do (sorry no pictures on this one):
  1. Crack 3 eggs and mix well with sugar, until the sugar is all "gone" (no more grains).
  2. In the flour you mix the baking powder
  3. Add the flour/baking powder mix into the eggs and mix until smooth.

This recipes will either give you 3 really thin layers, or two slightly thicker. I usually make 3.
 
4. Divide your mixture into your pans or bowls (If you want colors, now it is time to mix it in).
5. Put one pan at a time in the oven on the lowest rack and bake for 5 minutes (check with a
    toothpick or something else thin and sharp).
6. After they have cooled down, you can put the frosting from before in between.

When the cake is all layered up, you can decorate it, just the way you like it the best. I like to smash up Oreos and stick them on the outside with the help of some of the frosting, it gives it a nice rustic look.
